What is scratch cooking? Our executive chef, John Steward, says; "It’s taking a fresh product in its rawest form and transforming the product into something unique, different and ultimately tasty & delicious. All the imperfections you create when prepping the dish is what makes it perfect. The imperfections add character and vigor to a dish. It says I’m not machine made, but created with care and due diligence. Whether it takes an hour to make a dressing or a week to make a sauce, the process of “scratch” cooking is a soulful, serene and tumultuous ride."
